Caren Would Not Approve

Caren would not approve of today’s lunch. It’s a carb-on-carb atrocity again! Today’s main course consists of a pasta salad sandwich. The pasta salad is the store-bought Summer Fresh one that I mentioned a few posts ago and contains rigatoni, sundried tomatoes, dried basil, lemon vinaigrette, sparse crumbles of some kind of cheese (it ought to be mozzarella, but I can’t really tell) and cherry tomatoes, except don’t count the cherry tomatoes because while the pasta salad had them, I think there were only two and both were already eaten, so the sandwich doesn’t actually have any cherry tomatoes in it. There is likely also olive oil in the salad. I’m not really sure since I didn’t check the ingredients. The bread is regular white Wonderbread, which was bought before we went to Welland, then frozen so it wouldn’t go bad, and then partially thawed in the fridge (I say “partially” because I keep our fridge at its lowest temperature, which actually ends up having a lot of things inadvertently partially freezing).

Accessories to lunch are two half-tortilla sandwiches, which consist of one whole green pesto-garlic (at least, I think it’s pesto-garlic) tortilla ripped in half, with each half folded over to form something that somewhat resembles a sandwich. In one half of the tortilla, I spread hummus. I had originally planned to use the sesame & ginger Fontaine Santé hummus flavour because it’s almost finished and I figured might as well free up some space in our fridge, but it was frozen solid and unspreadable, because I keep our fridge too cold. The caramelized onion flavour was the only one that had a section that wasn’t completely frozen, so I used that one. In the other half of the tortilla, I used mayo because I wanted some variety in my life and because mayo is delicious. I also put in a couple of slices of Montreal smoked meat (it was on sale at Metro last week). Note that it’s not actual Montreal smoked meat but a deli-purchased cold cut that’s called “Montreal smoked meat.” Despite what Caren probably thinks, it was a pretty satisfying lunch!

Recipe for Pasta Salad Sandwich:

  • Prep time: 2 minutes
  • Cook time: 0 minutes
  • Difficulty: Easy
  • Servings: 1

Ingredients:

  • 2 Slices of partially frozen white Wonderbread
  • 6 Heaping tbsp Summer Fresh pasta salad without the cherry tomatoes

Instructions:

Dump the pasta salad on one piece of bread, spreading evenly. Cover with the second piece of bread.

Recipe for Montreal Smoked Meat Tortilla:

  • Prep time: 3 minutes
  • Cook time: 0 minutes
  • Difficulty: Easy
  • Servings: 1

Ingredients:

  • 1 tortilla
  • 4 slices fake Montreal smoked meat
  • 1 tbsp hummus
  • 1 tbsp mayonnaise

Instructions:

Rip the tortilla roughly in half (making a semi-circle). Spread the hummus evenly on one tortilla half. Place 2 slices of smoked meat on top of the hummus. Fold tortilla half in half (making a quarter-circle). Repeat with the second tortilla half, replacing the hummus with mayonnaise. This recipe takes a little longer, due to the extra time taken to rip the tortilla. It may take more or less time depending on how strong you are.
